Spinach Garlic Meatballs in Broth

Ingredients

  • 500gm  beef mince
  • 1 cup chopped fresh or frozen spinach
  • 1/4 cup minced garlic
  • salt & pepper, to taste
  • 4 large carrots or turnip pieces
  • bone broth

Instructions

  1. Chop the carrots into 1/2 inch chunks and place in a pot. Cover with bone broth.
  2. In a large bowl, mix and mash the beef, spinach, garlic, salt, and pepper until well combined.
  3. Roll into golf ball-ish sized balls, or whatever size you want. Place meatballs on top of the carrots.
  4. Gently simmmer broth until the carrots are tender (and the meatballs are cooked through)
  5. Serve as a soup, or with the carrots and meatballs on a plate, and the broth in a mug.
