
Ingredients
- 1 cup Jasmine Rice (dry, rinsed)
- 340 grams Chicken Breast (boneless, skinless, cubed)
- 2 heads Cauliflower (chopped into florets)
- 1/2 Yellow Onion (medium, sliced)
- 2 1/2 cups Chicken Broth
- 2 tbsps Ghee
- 1/2 Lemon (juiced)
- 1/2 tsp Garlic Powder
- 1/2 Sweet Potato (cubed)
- 1 tbsp Parsley (chopped)
Instructions
- Preheat the oven to 350ºF (175ºC). Grease a casserole dish.
- Add the rice, chicken, cauliflower, sweet potato, and onion to the casserole dish, spreading everything out evenly.
- Mix the broth, ghee, lemon juice, and garlic powder. Pour it over everything in the casserole dish evenly. Use a spoon to mix the broth in to ensure everything is well-coated in liquid.
- Bake, uncovered, for 30 to 35 minutes or until the rice and chicken are cooked and the cauliflower has some browned edges.
- Garnish with parsley and enjoy!
