Baby Bok Choy & Quinoa

Ingredients

  • 1 cup Quinoa (uncooked)

  • 2 cups Water

  • 8 cups Bok Choy (baby, halved)

Instructions

  1. Combine the quinoa and water together in a pot. Place over high heat and bring to a boil. Once boiling, reduce heat to a simmer and cover with a lid. Let it simmer for 13 to15 minutes or until water is absorbed. Remove lid and fluff with a fork.
  2. Meanwhile, place bok choy in a steamer over boiling water and cover. Let it steam for 2 to 3 minutes, or until just tender.
  3. Divide quinoa and bok choy into bowls or container. Enjoy!
