African Chicken Casserole

Ingredients

  • 1 cup Jasmine Rice (dry, rinsed)

  • 340 grams Chicken Breast (boneless, skinless, cubed)

  • 2 heads Cauliflower (chopped into florets)

  • 1/2 Yellow Onion (medium, sliced)

  • 2 1/2 cups Chicken Broth

  • 2 tbsps Ghee 

    1/2 Lemon (juiced)

  • 1/2 tsp Garlic Powder

  • 1/2 Sweet Potato (cubed)

  • 1 tbsp Parsley (chopped)

Instructions

  1. Preheat the oven to 350ºF (175ºC). Grease a casserole dish.
  2. Add the rice, chicken, cauliflower, sweet potato, and onion to the casserole dish, spreading everything out evenly.
  3. Mix the broth, ghee, lemon juice, and garlic powder. Pour it over everything in the casserole dish evenly. Use a spoon to mix the broth in to ensure everything is well-coated in liquid.
  4. Bake, uncovered, for 30 to 35 minutes or until the rice and chicken are cooked and the cauliflower has some browned edges.
  5. Garnish with parsley and enjoy!
